Menus at l’Auberge Carcajou are continuously renewed as seasons and supplies evolve. A northern region such as ours implies that we adapt to the availability of products and learn to store up for the seasons when regional products get scarce.

We thus make all possible efforts to put local products first of all on our plates. Not because what comes from elsewhere is not as good, but because we firmly believe in the necessity to encourage our local farmers in order to sustain a strong local economy.
